Here is a general recipe for preparing Chicken Biryani:

 

Ingredients:

 

1 lb boneless chicken thighs or breasts, cut into bite-sized pieces

2 cups basmati rice

1 onion, finely chopped

2 cloves of garlic, minced

1 inch ginger, grated

2-3 green chilies, chopped

1/2 cup yogurt

2 tbsp biryani masala

1 tsp red chili powder

1 tsp turmeric powder

1 tsp cumin powder

1 tsp coriander powder

Salt to taste

2 cups chicken broth or water

2 tbsp ghee or oil

1/4 cup chopped cilantro

1/4 cup chopped mint

1/4 cup raisins (optional)

1/4 cup cashews (optional)

Instructions:

 

In a pot or pan, heat ghee or oil and add onions. Cook until golden brown.

Add ginger and garlic and cook for a minute.

Add the chicken and stir-fry for 5-7 minutes until it is cooked through.

Add the biryani masala, red chili powder, turmeric powder, cumin powder, coriander powder and salt. Stir well.

Add the yogurt and stir until the chicken is well coated.

Add the rice and stir for a minute.

Add the chicken broth or water, mint, cilantro, raisins and cashews, if using, and bring it to a boil.

Reduce the heat to low, cover the pot and simmer for 18-20 minutes or until the rice is cooked and the liquid is absorbed.

Once cooked, turn off the heat and let the biryani rest for 10 minutes before serving.

You can garnish with fried onions, cashews, raisins and cilantro before serving.
